The harvest at Château Penin

Determining the date of harvest is the first challenge,that of harvesting the grapes at the optimum maturity for the wine to be produced. Note that depending on the terroirs, the grape varieties, the rootstocks, the evolution of the maturity of the grape is different.

It is for this reason that the harvest takes place over a period of a month, tasting the berries and checking the state of maturity of each of these components: skin, juice, seed, is almost daily work for each plot.

During the harvest, the stems and the berries are separated and only the berries are collected. They are transported to the cellar where they are sorted again to keep only the best berries that do not have any defects.
